Invisible Lizard's Excellent Spaghetti Sauce

  • 1 standard size jar of your favorite pasta sauce (I like the "Robusto" Ragu varieties myself)
  • 1 15oz can tomato sauce
  • 1 8oz can tomato paste with Italian seasonings
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/8 tsp red (cayenne) pepper
  • 1lb sweet Italian sausage
Pour the jar of pasta sauce, 15oz can of tomato sauce, and the 8oz can of tomato paste in a crock pot on medium heat. Brown the sausage and chop it into small pieces (as small as possible). Drain the grease and add this to the sauce. Put a little olive oil back in the same pan you were using to brown the sausage, and sauté the chopped onion and garlic until soft. (If you have a little red or balsamic vinegar, splash some on the onions, not too much, just a little flavor.) Pour all of this into the sauce. Add the cayenne pepper.

Add about a half cup of water to the aforementioned, and now mostly empty, jar of pasta sauce, seal it back up, shake it around to get as much of the sauce off the sides, and then pour that into the crock pot as well. The jar, now, becomes a nice place to hold your wooden spoon while the sauce cooks. You should stir often at first, until it comes to a nice simmer, then lower the heat and leave it for at least an hour, all afternoon if possible. Stir occasionally, but quickly so all the heat doesn't escape.

Makes enough for four large and hungry people, provided they bring their own al dente spaghetti noodles. And we recommend Texas Toast to compliment all the flavors.
